Ingredients of Jason's Gumbo

  1. You need 8 of ckn quarters.
  2. Prepare 2 lb of smoked sasuage.
  3. You need 1 lb of anduie.
  4. You need 2 of med size bone in pork chop.
  5. You need 1 lb of tasso.
  6. You need 2 of big onion.
  7. It's 2 of big bell pepper.
  8. Prepare 1 bunch of celery.
  9. It's 1 (32 oz) of ckn stock.
  10. It's 1 (32 oz) of beef stock.
  11. You need 4 cubes of ckn bouillon.
  12. It's 4 cubes of beef bouillon.
  13. You need of Roux (i use from a jar).

Jason's Gumbo step by step

  1. Cut all vegies to small cubes. Broil in ckn stock. Add seasonings and garlic now also..
  2. Add ckn, and the rest of the ckn stock and enough water to cover the ckn let boil for 30 min on high..
  3. Cut the rest of the meat into 1" pieces including pork off bone. Add all meat to gumbo including pork bones..
  4. Add the rest of ckn and beef stock, and the bouillon. Add roux to taste..
  5. Let simmer on med for a few hours, until ckn is falling off bone. Take ckn out and de-bone, also take the pork bones out. Put de-boned ckn back in and let simmer 1 more hour..
